Instructions

Uncover and gently stir the rice around the chicken to prevent sticking. Continue simmering uncovered for 4 to 8 more minutes until liquid is absorbed, rice is tender, and chicken is cooked through. If rice looks dry before cooked, add a splash of broth and cover briefly. Keep uncovered if salsa is very liquidy to thicken the sauce.
