A delicious and easy one-pan meal featuring tender, honey garlic glazed chicken breasts roasted alongside baby red potatoes and broccoli florets, finished with a broil for a caramelized, slightly charred finish. Perfect for a flavorful and balanced dinner prepared in under an hour.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

Honey Garlic Sauce

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons honey
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 3 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Kosher salt and freshly ground black pepper, to taste

Main Ingredients

  • 3 tablespoons olive oil, divided
  • 16 ounces baby red potatoes, halved
  • 4 boneless, skinless chicken breasts
  • 24 ounces broccoli florets
  • 2 tablespoons chopped fresh parsley leaves (for garnish)

Instructions

  1. Preheat and Prepare Baking Sheet: Preheat your oven to 400°F (204°C). Lightly oil a baking sheet or coat it with nonstick spray to prevent sticking during roasting.
  2. Make Honey Garlic Sauce: In a small bowl, combine 2 tablespoons olive oil, melted butter, honey, brown sugar, Dijon mustard, minced garlic, dried oregano, and dried basil. Whisk well until smooth, then season with kosher salt and freshly ground black pepper to taste. Set this honey garlic mixture aside.
  3. Prepare Potatoes and Chicken: Arrange the halved baby red potatoes in a single layer on the prepared baking sheet. Drizzle the remaining 1 tablespoon of olive oil over the potatoes, then season with salt and pepper. Place the chicken breasts in a single layer alongside the potatoes. Brush each chicken breast generously with the prepared honey garlic sauce.
  4. Roast and Add Broccoli: Put the baking sheet in the oven and roast for 25-30 minutes, until the chicken reaches an internal temperature of 165°F (74°C) and is fully cooked. About 10 minutes before the end of the cooking time, stir in the broccoli florets among the potatoes and chicken to roast them together.
  5. Broil for Caramelization: After roasting, switch the oven setting to broil. Broil the entire pan for 2-3 minutes or until the chicken and veggies are caramelized and slightly charred for optimal flavor and texture.
  6. Garnish and Serve: Remove the pan from the oven. Sprinkle chopped fresh parsley over the chicken and vegetables for a fresh, colorful finish. Serve immediately while hot.

Notes

  • Ensure chicken reaches an internal temperature of 165°F for safe consumption.
  • Broccoli can be substituted with other quick-roasting vegetables like asparagus or green beans.
  • Adjust honey and brown sugar quantities if a sweeter or less sweet glaze is preferred.
  • Using baby potatoes helps reduce roasting time; larger potatoes may require longer.
  • For a crispier skin, pat the chicken dry before applying the glaze.
