- 5 small yellow onions, sliced (or 3 large yellow onions, sliced)
- 1 head garlic, top sliced off
- ½ cup sun dried tomatoes, chopped
- 1 tsp salt
- 1 tsp black pepper
- 1 tbsp paprika
- 1 tsp dried parsley
- ½ cup coconut milk
- 3 cups farfalle pasta, cooked
- 1 handful fresh parsley, chopped
- 1 handful fresh basil, chopped
- 1 lemon, juiced
- Olive oil or leftover sun dried tomato oil for drizzling
Instructions
- Preheat the oven: Set your oven to 400°F (200°C) to prepare for the caramelization process of the onions and garlic.
- Prepare the casserole: In a casserole dish, combine the sliced onions, chopped sun dried tomatoes, paprika, salt, pepper, and dried parsley. Toss these ingredients together to evenly coat the onions and tomatoes with the spices.
- Add garlic and oil: Place the whole head of garlic, with the top sliced off, in the center of the casserole. Drizzle olive oil or leftover sun dried tomato oil over the entire dish to aid in roasting and flavor development. Cover the casserole with foil.
- Roast the onions and garlic: Place the casserole dish in the preheated oven and roast for 1 hour. Toss the ingredients halfway through to ensure even caramelization. The onions should become soft and golden brown by the end.
- Cook the pasta: About 20 minutes before the onions are finished, cook the farfalle pasta according to package instructions. Reserve up to 1 cup of pasta water before draining.
- Squeeze roasted garlic: Remove the roasted garlic head from the casserole. When cool enough to handle, squeeze the soft garlic cloves out into the dish.
- Combine ingredients: Add the fresh chopped parsley, basil, lemon juice, and coconut milk to the casserole with caramelized onions and sun dried tomatoes. Stir in the cooked farfalle pasta, adding reserved pasta water as needed to loosen and create a creamy sauce.
- Serve: Mix well to combine all flavors fully, then serve warm and enjoy your flavorful one pan caramelized onion pasta.
