Ingredients
Custard Filling
- 1 (12.3 ounce or 349 gram) package silken tofu
- 1 cup full-fat coconut milk
- ⅔ cup organic granulated sugar
- 4 tablespoons cornstarch
- 2 teaspoons vanilla bean paste
- ½ teaspoon salt
- Pinch turmeric (optional, for eggy color)
- 2 tablespoons organic brown sugar (for topping)
Pie Crust
- 1 vegan pie crust of choice (such as a half batch of vegan pie crust recipe, or a full batch of coconut oil pie crust recipe)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the pie.
- Prepare Custard Mixture: Place silken tofu, full-fat coconut milk, granulated sugar, cornstarch, vanilla bean paste, salt, and optional turmeric into a blender or food processor fitted with an S-blade. Blend until the mixture is completely smooth and creamy.
- Pour into Pie Crust: Pour the blended tofu custard mixture into the prepared vegan pie crust, spreading it evenly.
- Add Topping: Sprinkle the top of the custard evenly with organic brown sugar to help form a slightly caramelized crust.
- Bake: Bake the pie in the preheated oven for 45 to 50 minutes until the custard is partially set but still has a slight wobble in the center, indicating it’s perfectly cooked but not overdone.
- Cool: Transfer the pie to a cooling rack and let it cool to room temperature to set further.
- Chill: Once cooled, place the pie in the refrigerator and chill for at least 1 hour before serving to allow the custard to firm up and flavors to meld.
- Serve: Slice the chilled pie and serve as a delicious vegan dessert.
Notes
- Using turmeric is optional and only adds a subtle eggy yellow color without flavoring the pie.
- Ensure the tofu is silken to achieve the smoothest custard texture.
- If desired, garnish with fresh berries or a dollop of vegan whipped cream for added flavor.
- The pie is best enjoyed chilled, but can be served slightly warmed if preferred.
