Ingredients
Wet Ingredients
- 3 extremely ripe (even brown) bananas, mashed
- 1/2 cup unsalted butter, melted
- 2 eggs, room temperature
- 1/2 cup non-fat Greek yogurt
- 2 teaspoons vanilla extract
Dry Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 3/4 cup sugar
- 1 teaspoon salt
Additional
- 2/3 cup Nutella
Instructions
- Preheat the Oven: Preheat the oven to 350ºF (175ºC). Line a loaf pan with parchment paper to prevent sticking and ensure easy removal of the bread.
- Prepare Wet Ingredients: In a large bowl, combine the mashed bananas with the melted butter and stir well to combine. Add the eggs, Greek yogurt, and vanilla extract, mixing until smooth and fully incorporated. Set aside.
- Prepare Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and sugar. This ensures even distribution of leavening agents and seasoning.
- Combine Batter: Gradually fold the dry ingredients into the wet banana mixture using a spatula, mixing gently until just combined. Avoid overmixing to keep the bread tender.
- Layer Batter and Nutella: Pour half of the batter into the prepared loaf pan, spreading it evenly. Microwave the Nutella for about 20 seconds to soften it for easier drizzling. Drizzle half of the warmed Nutella over the batter, then gently swirl it with a knife or skewer to create ribbons.
- Add Remaining Batter and Nutella: Pour the remaining batter on top, leveling it gently. Drizzle the remaining Nutella and swirl again to create an attractive marbled effect.
- Bake the Bread: Place the loaf pan in the preheated oven and bake for approximately 45 minutes, or until a knife or toothpick inserted into the center comes out clean, indicating the bread is fully baked.
- Cool and Remove: Allow the bread to cool in the pan for about 15 minutes before removing it to a wire rack to cool completely. This step helps the bread set and makes it easier to slice.
Notes
- Use very ripe bananas (with brown spots) for maximum sweetness and moisture.
- Microwaving Nutella slightly makes it easier to drizzle and swirl into the batter for a marbled effect.
- Do not overmix the batter once the dry ingredients are added to maintain a tender crumb.
- Allow bread to cool before slicing to ensure clean pieces.
- This bread can be stored at room temperature in an airtight container for up to 3 days or refrigerated for up to a week.
