4.1 from 1 review

These No Bake Matcha Cookie Dough Energy Bites are a quick, nutritious, and delicious snack made with a blend of almond and oat flours, vanilla plant protein, flaxseed, and vibrant matcha green tea powder. Sweetened naturally with maple syrup and combined with creamy cashew butter, these energy bites offer a perfect balance of flavors and textures without the need for baking. Ideal for a healthy on-the-go snack or a pre/post-workout boost, they come together in just 10 minutes and are easily stored in the fridge or freezer.

  • Total Time: 10 minutes
  • Yield: 18 energy bites

Ingredients

Dry Ingredients

  • 1 cup almond flour
  • ½ cup oat flour
  • ¼ cup vanilla plant protein powder
  • ¼ cup ground flaxseed
  • 1 tbsp matcha green tea powder
  • ¼ tsp fine sea salt

Wet Ingredients

  • ½ cup cashew butter (or almond butter; peanut not recommended)
  • ¼ cup pure maple syrup
  • 1 tbsp water

Instructions

  1. Mix Dry Ingredients: Whisk together the almond flour, oat flour, vanilla protein powder, ground flaxseed, matcha powder, and fine sea salt in a medium mixing bowl until evenly combined.
  2. Add Wet Ingredients and Combine: Add the cashew butter, pure maple syrup, and water to the dry ingredients. Use your hands to thoroughly work the mixture until it sticks together easily and is no longer crumbly. If the mixture is too dry and crumbly, gradually add a bit more water until reaching the right consistency.
  3. Form Balls and Store: Roll the mixture into bite-sized balls using your hands. Place the energy bites in an airtight container and store them in the refrigerator or freezer for up to two weeks.

Notes

  • Use vanilla plant protein powder for added flavor and nutrition; any plant-based protein powder can be used.
  • Oat flour can be made by grinding rolled oats in a food processor if not store-bought.
  • Adjust water quantity as needed to achieve the perfect dough-like consistency.
  • Cashew butter or almond butter works best for creaminess; peanut butter may alter taste and texture.
  • Store energy bites in the freezer for longer shelf life and to keep them firm.
  • For a nut-free option, substitute almond flour with sunflower seed flour and use sunflower seed butter.
