Instructions

  1. Melt Chocolate and Coconut Oil: Heat a pot on medium heat. Once warm, add the coconut oil and chopped dark chocolate. Stir until completely melted and combined.
  2. Add Syrup and Nut Butter: Reduce the heat to low, then add the date syrup, almond butter, and vanilla bean paste. Mix thoroughly to combine all ingredients into a smooth mixture.
  3. Incorporate Oats and Salt: Add the old fashioned oats and salt to the pot. Stir everything together until the mixture forms a dough-like texture, ensuring oats are fully coated.
  4. Form the Bites: Remove the pot from heat. Line a plate or baking pan with parchment paper. Using a cookie scoop or spoon, scoop out the dough and roll into small bite-sized balls. Place them evenly on the lined surface.
  5. Chill to Harden: Place the plate or pan with the oat bites in the freezer for 10 minutes or the refrigerator for 20 minutes until the bites harden and set.
