Ingredients
Base Mixture
- 1 cup butter
- ½ cup brown sugar, packed
- 1 teaspoon vanilla bean paste
- 3 cups quick cooking oats
Chocolate Peanut Butter Layer
- 1 cup semisweet chocolate chips
- ½ cup creamy peanut butter
Chocolate Drizzle
- Chocolate chips, for drizzle (approximately ¼ cup)
Instructions
- Prepare the Pan: Grease a 9×9-inch pan thoroughly or line it with parchment paper to prevent the bars from sticking.
- Make the Oat Mixture: In a medium pot over low heat, melt the butter. Stir in the brown sugar and vanilla bean paste until well combined. Add the quick cooking oats and cook on low for a few minutes, stirring frequently to meld the flavors and soften the oats.
- Form the Bottom Layer: Pour half of the oat mixture into the prepared pan and press down firmly with a spatula to create an even base layer. Set aside the remaining oat mixture for later.
- Prepare the Chocolate Peanut Butter Mixture: In a separate pot over low heat, melt the semisweet chocolate chips and creamy peanut butter together. Stir continuously until the mixture is smooth and well combined. Pour this mixture evenly over the oat base layer in the pan.
- Add Top Oat Layer: Crumble the reserved oat mixture evenly over the chocolate peanut butter layer. Press gently to adhere it slightly without compacting too hard.
- Drizzle Chocolate: Melt additional chocolate chips (about ¼ cup) until smooth. Drizzle this melted chocolate over the top oat layer to decorate and add extra chocolate flavor.
- Chill and Set: Cover the pan and refrigerate for at least 2 hours, allowing the bars to firm up. Before slicing, bring the bars to room temperature slightly for easier cutting and enjoy your delicious no bake chocolate oat bars.
Notes
- Use quick cooking oats for the best texture and ease of mixing.
- If you prefer a nut-free version, substitute peanut butter with sunflower seed butter.
- For a vegan option, replace butter with coconut oil and use dairy-free chocolate chips.
- Ensure all chocolate melts are stirred thoroughly to avoid burning or grainy texture.
- Bars can be stored in an airtight container in the refrigerator up to one week.
