Pasta
- 8 ounces linguine (or other pasta of your choice)
Sauce
- 1 tablespoon extra virgin olive oil
- 1 tablespoon unsalted butter
- 3 sliced scallions (white and green parts separated)
- 12-16 ounces thinly sliced shiitake mushrooms (stems removed)
- 2 cloves garlic (minced)
- 1/2 cup heavy cream
- 1/4 cup freshly grated parmesan cheese
- 1 1/2 tablespoons white miso
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon ground black pepper
Instructions
- Cook Pasta: Bring a large pot of generously salted water to a boil and cook the linguine until al dente. Reserve 1/4 cup of the pasta cooking water, then drain the pasta.
- Sauté Aromatics: While the pasta cooks, heat olive oil and unsalted butter together in a large skillet or Dutch oven over medium heat.
- Cook Mushrooms and Scallions: Add the white parts of the scallions and cook until softened, about 2-3 minutes. Then, add the sliced shiitake mushrooms and cook, stirring occasionally, until they are lightly browned, approximately 5 minutes. Stir in the minced garlic and cook until fragrant, about 30-60 seconds.
- Make Sauce: Reduce the heat to low and add the heavy cream, grated parmesan cheese, white miso, fresh lemon juice, and ground black pepper. Stir continuously until the sauce is smooth and well combined.
- Combine Pasta and Sauce: Add the cooked linguine and reserved pasta water to the skillet. Toss gently to coat the noodles evenly with the creamy miso mushroom sauce.
- Serve: Garnish the pasta with the green parts of the scallions and serve immediately for best flavor and texture.
Notes
- Reserve pasta cooking water as it helps loosen the sauce and makes it silky.
- Adjust mushrooms quantity based on preference; more mushrooms add earthier flavor.
- White miso provides a milder, sweeter taste compared to red miso.
- For a vegan version, substitute heavy cream and butter with plant-based alternatives and omit parmesan or use a vegan cheese.
- Use freshly grated parmesan for the best melting and flavor.
