These Pancake Bites, also known as Mini Pancake Muffins, are delightful bite-sized treats perfect for a quick breakfast or snack. Light, fluffy, and packed with mini chocolate chips, they combine the classic flavors of pancakes in a convenient muffin form, baked to golden perfection.

  • Total Time: 20 minutes
  • Yield: 24 mini pancake bites

Ingredients

Dry Ingredients

  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 2/3 cup buttermilk
  • 1 large egg
  • 2 tablespoons pure maple syrup
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla bean paste

Add-ins

  • 1/3 cup mini chocolate chips (or blueberries)

Instructions

  1. Preheat the oven: Preheat your oven to 350 degrees Fahrenheit. Spray a mini muffin tin with cooking spray to prevent sticking and set it aside.
  2. Mix dry ingredients: In a medium bowl, combine the all purpose flour, baking powder, baking soda, and salt. Stir to evenly distribute the leavening agents and salt.
  3. Whisk wet ingredients: In a measuring cup or small bowl, whisk together the buttermilk, egg, maple syrup, melted butter, and vanilla bean paste until smooth and well combined.
  4. Combine wet and dry: Pour the wet ingredients into the bowl with the dry ingredients. Stir gently with a spoon until just combined; be careful not to overmix to keep the batter light and fluffy.
  5. Add chocolate chips: Fold in the mini chocolate chips, reserving a few to sprinkle on top of the batter in the muffin tin.
  6. Fill muffin tin: Spoon the pancake batter into the prepared mini muffin pan, filling each cup about two-thirds full to allow room for rising.
  7. Bake: Bake in the preheated oven for 10 to 12 minutes or until the pancake bites are puffed up and the edges start to turn golden brown.
  8. Serve: Remove from the oven and allow to cool slightly. Serve warm with maple syrup if desired for an extra touch of sweetness.

Notes

  • The mini chocolate chips can be substituted with blueberries or other small berries for a fruity variation.
  • Ensure not to overmix the batter to maintain a fluffy texture.
  • Use fresh buttermilk or add 1 tablespoon of vinegar to regular milk and let it sit for 5 minutes to substitute if needed.
  • These pancake bites freeze well; store in an airtight container and reheat before serving.
  • Using a mini muffin pan ensures perfectly bite-sized pancakes.
