Ingredients
Vegetables and Aromatics
- 1 medium onion, diced
- 1 red pepper, diced
- 50 g (~1/3 cup) sweetcorn kernels (frozen or fresh)
- 2 cloves garlic, minced
- Few pieces pickled jalapeños, chopped (optional)
- Fresh coriander (cilantro), to serve
Spices
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
Canned Goods
- 400 g tin black beans, drained (240 g or ~1 1/4 cups when drained)
- 400 g tin chopped tomatoes (~1 1/3 cups)
Dairy
- 4 eggs
- 50 g cheddar cheese, grated (~1/2 cup)
Others
- 1 tablespoon oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat oil and cook vegetables: Heat the oil in a frying pan over medium heat. Add the diced onion, red pepper, and sweetcorn. Cook for about 5 minutes until the vegetables are softened.
- Add spices and garlic: Stir in the ground cumin, smoked paprika, minced garlic, and chopped pickled jalapeños if using. Cook for an additional 2 minutes to release the flavors.
- Preheat oven: While the vegetables and spices cook, preheat your oven to 190°C (375°F / Gas Mark 5).
- Add beans, tomatoes, and seasoning: Mix in the drained black beans and chopped tomatoes. Season with salt and black pepper. Stir well, bring the mixture to a simmer, and cook for 5 minutes to blend the flavors.
- Transfer mixture if needed: If your frying pan is not oven-safe, transfer the bean and vegetable mixture to an oven-safe baking dish.
- Prepare eggs and cheese topping: Make 4 small wells in the bean mixture and carefully crack one egg into each well. Sprinkle the grated cheddar cheese evenly on top.
- Bake the eggs: Place the pan or baking dish into the preheated oven and bake for 10 to 20 minutes. For firm yolks, bake for 20 minutes; for runny yolks, check between 10 to 15 minutes.
- Serve: Remove from oven and serve immediately, garnished with fresh coriander (cilantro) if desired.
