A quick and flavorful Mediterranean Ground Beef Stir Fry combining sautéed vegetables, tender ground beef, and creamy feta cheese for a vibrant, wholesome meal ready in just 25 minutes.

  • Total Time: 25 minutes
  • Yield: 4 servings

Ingredients

Vegetables

  • 1 red bell pepper, deseeded and diced
  • 1 pint cherry tomatoes, sliced in half
  • 8 ounces baby spinach (small tub)
  • 4 garlic cloves, minced
  • 2 green onions, thinly sliced (white and green parts separated)

Protein & Dairy

  • 1 pound ground beef
  • 2 tablespoons crumbled feta (optional)

Pantry

  • 1 tablespoon olive oil
  • ½ teaspoon dried oregano
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Cook the tomatoes and bell pepper: Heat the olive oil in a large pan over medium-high heat. Add the diced red bell pepper and halved cherry tomatoes. Sauté for 4 to 5 minutes, stirring occasionally, until the tomatoes are blistered and have released their juices, forming a saucy texture. Add the minced garlic and stir for an additional minute to release its aroma.
  2. Add the spinach and white parts of green onion: Add the baby spinach and the white portions of the sliced green onion to the pan. Although the spinach will fill the pan initially, continue stirring and cooking for 2 to 3 minutes as it wilts down significantly. Once wilted, transfer the cooked vegetables to a plate and set aside.
  3. Cook the ground beef: In the same pan, add the ground beef, sprinkling in the dried oregano, kosher salt, and freshly ground black pepper to taste. Use a spatula to break up the meat into small pieces and cook thoroughly until browned evenly. Drain any excess grease to keep the stir fry lean and flavorful.
  4. Combine and warm through: Return the reserved vegetables back into the pan with the cooked beef. Add the green parts of the sliced green onion and stir everything together until heated through and well combined.
  5. Garnish and serve: Remove the pan from heat and sprinkle crumbled feta cheese over the top if using. Serve immediately for a fresh and satisfying Mediterranean-inspired meal.

Notes

  • You can substitute ground turkey or chicken for a leaner version.
  • Omit feta for a dairy-free option.
  • Add a pinch of red pepper flakes for a spicy kick.
  • Serve over rice, quinoa, or with warm pita bread for a complete meal.
  • Leftovers can be refrigerated for up to 3 days and reheated gently.
