These Matcha Pistachio Energy Balls are a vibrant, healthy snack combining the earthy flavor of matcha with the creamy crunch of pistachios and cashews. Naturally sweetened with Medjool dates and lightly coated in chopped pistachios, these no-bake energy balls are perfect for a quick pick-me-up or a nutritious snack on the go.

  • Total Time: 15 minutes
  • Yield: 14 servings (energy balls)

Ingredients

Nut and Seed Ingredients

  • ¾ cup raw cashews
  • ¼ cup raw shelled pistachios
  • ¼ cup roughly chopped pistachios (for rolling)

Sweeteners and Flavorings

  • 12 pitted Medjool dates
  • 2 teaspoons matcha powder
  • 1 tablespoon coconut oil

Additional Ingredients

  • ¼ cup unsweetened shredded coconut

Instructions

  1. Blend. Place the cashews, raw shelled pistachios, Medjool dates, shredded coconut, matcha powder, and coconut oil into a food processor. Process for about one minute or until the mixture is finely chopped and thoroughly blended into a sticky, cohesive dough.
  2. Scoop and make balls. Using a medium cookie scoop, portion out the mixture and roll it between your hands to form evenly sized energy balls approximately 1-inch in diameter.
  3. Roll in pistachios. After shaping all the balls, roll them through the roughly chopped pistachios, pressing gently to ensure the nuts stick well to the surface for added texture and flavor.
  4. Chill. Place the energy balls in the refrigerator and chill for at least 15 minutes to allow them to firm up slightly before serving. Enjoy as a nourishing snack anytime.

Notes

  • For a nuttier flavor, lightly toast the raw cashews and pistachios before blending.
  • If the mixture is too dry, add a teaspoon of water or more coconut oil to help it bind better.
  • Store these energy balls in an airtight container in the refrigerator for up to one week.
  • These energy balls can also be frozen for up to one month; thaw before eating.
  • Use ceremonial grade matcha for a brighter, more vibrant green color and better flavor.
