This Maple French Toast Bagel recipe combines the flavors of classic French toast with the chewy delight of homemade bagels. Infused with cinnamon chips and maple flavoring, these bagels are boiled then baked to golden perfection, finished with a sweet vanilla-egg wash that creates a glossy, flavorful crust. Perfect for breakfast or brunch, these bagels offer a delightful twist on a breakfast favorite.

  • Total Time: 1 hour 15 minutes
  • Yield: 8 bagels

Ingredients

Dough Ingredients

  • 2 cups warm water (105°F -113°F)
  • 1 1/2 tbsp dry active yeast
  • 1/4 cup brown sugar, packed
  • 1 tsp maple flavoring
  • 4 1/2 – 5 cups bread flour
  • 2 tsp salt
  • 1 1/2 cups cinnamon chips

Egg Wash Ingredients

  • 1 egg
  • 1 tbsp milk
  • 1 tbsp granulated sugar
  • 1/2 tsp vanilla bean paste

Additional

  • 1 tbsp brown sugar (for dough, part of division from the initial sugar amount)

Instructions

  1. Activate yeast: In a small bowl, combine warm water (105°F -113°F), dry active yeast, and brown sugar. Stir gently and set aside until the mixture becomes foamy and bubbly, indicating that the yeast is activated.
  2. Combine dry ingredients: In a large bowl or the bowl of a stand mixer, mix together 4 1/2 cups bread flour, 1/4 cup brown sugar, salt, and cinnamon chips to evenly distribute cinnamon flavor in the dough.
  3. Mix yeast and dry ingredients: Add the foamy yeast mixture and maple flavoring to the dry ingredients. If the yeast isn’t bubbly and foamy, discard and start again to ensure proper activation.
  4. Knead the dough: Using a stand mixer with a dough hook, knead the dough for 10 minutes, adding up to 1/2 cup extra flour as needed to keep the dough soft and workable. If kneading by hand, stir until a shaggy dough forms, then knead on a clean surface for 10 minutes adding flour as needed.
  5. Rest the dough: Let the kneaded dough rest for 5 minutes to relax the gluten, making shaping easier.
  6. Divide and shape: Cut the dough into 8 equal pieces using a sharp knife or bench scraper. Form each piece into a tight ball, then press your thumb into the center and rotate the dough around your thumb to form the bagel shape. Place on a parchment or silicone-lined three-quarter sheet pan.
  7. First rise: Cover the shaped bagels with plastic wrap and allow them to rise at room temperature for 20 minutes until slightly puffed.
  8. Preheat oven and boil water: Preheat the oven to 425°F. Meanwhile, bring a large pot with about 4 inches of water to a rolling boil for boiling the bagels.
  9. Prepare egg wash: Whisk together the egg, milk, granulated sugar, and vanilla bean paste until fully combined and set aside.
  10. Boil bagels: Carefully drop bagels into the boiling water in batches. Boil each bagel for 1 minute, then flip and boil for an additional minute. Use a slotted spoon to remove them and place back onto the lined sheet pan.
  11. Apply egg wash: Brush each boiled bagel generously with the egg wash to achieve a glossy finish during baking.
  12. Bake the bagels: Bake in the preheated oven for 15-17 minutes, or until bagels turn golden brown and have a firm crust.
  13. Cool and serve: Let the bagels cool on a wire rack for 10 minutes before slicing. Serve warm for best flavor and texture. Store leftovers in a zip-top bag at room temperature for up to 3 days.

Notes

  • Ensure yeast activation by maintaining water temperature between 105°F and 113°F to get a foamy mixture; otherwise, the bagels may not rise properly.
  • If you don’t have cinnamon chips, you can substitute with cinnamon chips substitutes like cinnamon sugar or chopped cinnamon candies, but the texture will vary.
  • Use vanilla bean paste for more intense flavor; vanilla extract can be used as an alternative.
  • Boiling the bagels before baking is crucial for the characteristic chewy texture and shiny crust.
  • These bagels freeze well after baking; thaw and lightly toast before serving.
  • Adjust brown sugar slightly to control sweetness according to taste.
