  • Total Time: 27 minutes
  • Yield: 6 donuts

Ingredients

Donut Ingredients

  • 1 cup + 2 tbsp almond flour
  • 1/3 cup Monk Fruit Granulates
  • 1/3 cup Vanilla Protein Powder (plant based for dairy free)
  • 1 large egg
  • 1/3 cup unsweetened almond milk
  • 1 tbsp lemon juice
  • 1 tbsp lemon zest
  • 2 tbsp melted coconut oil
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp vanilla bean paste
  • small pinch of salt

Glaze Ingredients

  • 1/3 cup vanilla protein powder
  • 3 tbsp unsweetened almond milk
  • 1 1/2 tbsp plain dairy free yogurt
  • 1 tbsp Monk Fruit Syrup or Honey
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1/4 tsp vanilla bean paste

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) to prepare for baking the donuts.
  2. Mix the donut batter: In a medium bowl, combine all the donut ingredients. Use an electric mixer on medium to high speed to thoroughly blend the batter, scraping down the sides of the bowl a few times to ensure even mixing.
  3. Prepare the donut pan: Grease a 6-hole donut pan and spray it with cooking spray to prevent sticking.
  4. Fill the molds: Pour or pipe the donut batter evenly into each of the six molds to ensure consistent baking.
  5. Bake the donuts: Place the pan in the preheated oven and bake for 15-17 minutes. Check doneness by inserting a toothpick into a donut; it should come out clean. Avoid overbaking to keep the donuts moist.
  6. Make the glaze: While the donuts bake, whisk together all the glaze ingredients in a small bowl until smooth and creamy.
  7. Cool the donuts: When baking is complete, remove the donuts from the oven and allow them to cool in the pan for 3-4 minutes. Then transfer them to a wire rack to cool completely.
  8. Glaze the donuts: Once cool, spoon the lemon glaze over each donut, covering the tops evenly.
  9. Finish and serve: Sprinkle additional lemon zest on top of each glazed donut for extra flavor and garnish. Serve and enjoy your protein-packed lemon vanilla donuts!

Notes

  • Do not overbake the donuts; remove them as soon as a toothpick comes out clean to maintain moisture.
  • You can substitute honey with Monk Fruit syrup for a fully sugar-free option.
  • Use a piping bag or a zip-lock bag with the corner snipped to fill the donut molds for neatness.
  • For a dairy-free glaze, ensure the yogurt you use is plant-based.
  • Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for longer freshness.
