Ingredients
Chia Pudding Layer
- 1/4 Cup Chia Seeds
- 1 Cup Oat Milk
- Zest of 1 Lemon
- 2 Tablespoons Maple Syrup
- 1/4 Teaspoon Vanilla Extract
- 1/4 Teaspoon Sea Salt
Lemon Cream Pudding Layer
- 1 Cup Raw Cashews (soaked for one hour in hot water and drained)
- 1/2 Cup Oat Milk
- 2 Tablespoons Maple Syrup
- 2 Tablespoons Lemon Juice
- 1/4 Teaspoon Turmeric (for color)
- 1/2 Teaspoon Lemon Extract
Instructions
- Prepare Chia Pudding Layer: In a mixing bowl, whisk together the chia seeds, oat milk, lemon zest, maple syrup, vanilla extract, and sea salt for about a minute until the mixture is evenly combined.
- Set Chia Pudding: Transfer the chia pudding mixture to the fridge and let it set for approximately 3 hours or overnight to achieve a thick, gel-like consistency.
- Soak Cashews: Soak the raw cashews in boiling hot water for one hour (alternatively, soak overnight at room temperature), then drain thoroughly.
- Blend Lemon Cream Pudding: Add the soaked cashews, oat milk, maple syrup, lemon juice, turmeric, and lemon extract into a blender. Blend on high speed until the mixture is silky smooth and evenly combined.
- Assemble Pudding Layers: Evenly divide the set chia pudding mixture into 4 small jars as the base layer.
- Add Lemon Cream Layer: Pour the blended lemon cream pudding carefully on top of the chia pudding layer in each jar.
- Chill to Set: Place the assembled jars back into the fridge and allow to set for another 3 hours before serving to enhance flavor and texture.
- Serve: Optionally, top with fresh fruit or desired toppings, then enjoy this bright and creamy lemon chia pudding.
Notes
- Soaking the cashews properly is essential to achieve a smooth, creamy lemon layer.
- Chia pudding requires refrigeration time to thicken — plan ahead for at least 3 hours or overnight.
- Turmeric is used only for adding a subtle yellow color and does not significantly affect the flavor.
- This recipe is vegan, dairy-free, and gluten-free.
