These Lemon Blueberry Cobbler Bars combine a buttery shortbread crust with a refreshing lemon-infused blueberry filling. Perfectly balanced with tart citrus notes and sweet berries, these bars are baked until set and make a delightful dessert or snack for any occasion.

  • Total Time: 2 hours 15 minutes
  • Yield: 12 servings

Ingredients

Crust

  • 1 cup sugar
  • 1 tablespoon fresh lemon zest
  • 3 cups all-purpose flour
  • ½ teaspoon salt
  • ¾ cup unsalted butter, melted

Filling

  • 3 large eggs
  • ⅓ cup half and half
  • 1 cup brown sugar
  • 1 tablespoon fresh lemon zest
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla bean paste
  • 1 tablespoon cornstarch
  • Pinch of kosher salt
  • 2 to 2 ½ cups fresh or frozen blueberries

Instructions

  1. Preheat and prepare dish. Preheat the oven to 350 degrees F. Spray a 9×13 inch baking dish with nonstick spray to prevent sticking.
  2. Make lemon sugar for the crust. In a small bowl, rub the sugar together with 1 tablespoon fresh lemon zest until lemon zest is evenly distributed throughout the sugar.
  3. Form the crust dough. In a large bowl, combine the flour, lemon sugar, and ½ teaspoon salt. Add the melted butter and stir until a shortbread-like dough forms. Use your hands if needed to bring it together.
  4. Press crust into dish. Press half of the dough evenly into the bottom of the prepared baking dish, creating the base layer.
  5. Prepare filling. In a separate bowl, whisk together the eggs, half and half, brown sugar, 1 tablespoon lemon zest, lemon juice, vanilla bean paste, pinch of kosher salt, and cornstarch until smooth. Gently fold in the blueberries to coat them without breaking.
  6. Assemble bars. Pour the blueberry filling mixture over the pressed crust. Crumble the remaining half of the shortbread dough over the top of the filling, distributing it evenly.
  7. Bake. Bake in the preheated oven for 40 to 45 minutes, or until the bars are set and no longer jiggly in the center.
  8. Cool and slice. Allow the bars to cool completely in the baking dish before slicing. For best results, chill in the refrigerator overnight before cutting into squares.

Notes

  • You can use fresh or frozen blueberries; if frozen, do not thaw before adding to filling.
  • Chilling the bars overnight helps them set fully and makes them easier to slice.
  • Vanilla bean paste can be substituted with pure vanilla extract if unavailable.
  • Make sure to evenly distribute the lemon zest in the sugar to get bright lemon flavor throughout the crust.
  • Pressing the crust firmly ensures a sturdy base for the bars.
