Instructions
- Prepare the crust: Preheat the oven to 350°F (175°C). Place the pie crust into a 9.5-inch pie plate, pressing it firmly into the bottom and up the sides of the dish. Flute the edges decoratively and set aside.
- Mix the wet ingredients: In a medium mixing bowl, whisk together the sugar, brown sugar, vanilla bean paste, eggs, and salt until the mixture is smooth and well combined.
- Add dry ingredients: Stir in the coarsely crushed graham crackers, toasted chopped pecans, shredded coconut, and melted butter. Mix thoroughly until all ingredients are evenly incorporated into the filling.
- Fill and bake the pie: Pour the filling mixture into the prepared pie crust, spreading it evenly. Bake in the preheated oven for 30 to 35 minutes, until the top is browned but the center still jiggles slightly when the pie plate is gently shaken.
- Cool the pie: Remove the pie from the oven and allow it to cool completely on a wire rack to set before slicing and serving.
- Serve: When ready to serve, garnish each slice with fresh banana slices and a dollop of whipped cream to enhance the flavors and add a creamy touch.
