Ingredients

  • 1/2 cup peanut butter

  • 2 tbsp sambal oelek chili paste
  • 1 tbsp fish sauce

Vegetables and Garnish

  • 1/2 cup scallions, chopped
  • 1 cup matchstick carrots (or julienne)
  • 2 red peppers, diced
  • 1/2 cup chopped cilantro
  • 1/2 cup peanuts (garnish)

Instructions

  1. Prepare the sauce base: Press the sauté button on your Instant Pot and add minced ginger, sambal oelek chili paste, fish sauce, sesame oil, soy sauce, peanut butter, and chicken broth into the inner pot. Stir to combine allowing the peanut butter to thin out and prevent burning.
  2. Add chicken: Place the small bite-sized pieces of chicken directly into the sauce mixture inside the pot.
  3. Add noodles: Lay the flat rice stick noodles on top of the chicken and sauce, pushing them down slightly to submerge.
  4. Pressure cook: Secure the lid on your Instant Pot and set it to manual high pressure for 4 minutes.
  5. Release pressure: When cooking is complete, quick release the pressure immediately to avoid overcooking. Remove the lid carefully.
  6. Adjust consistency: If the noodles are too sticky, gradually add water in 1/2 cup increments, stirring gently to loosen and create a more saucy texture.
  7. Add vegetables: Fold in the matchstick carrots, chopped scallions, and diced red peppers gently into the noodles and sauce mix.
