  • 2 cups dry fusilli pasta
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme or parsley

Instructions

  1. Sauté the vegetables: Set the Instant Pot to Sauté mode and heat the olive oil. Add the diced onion, sliced carrots, and celery, cooking for 2 to 3 minutes until they begin to soften and release their fragrance.
  2. Prepare and add chicken and seasonings: Carefully slice the bone-in chicken thighs into thin strips, avoiding bones. Add the chicken pieces along with the bones back into the Instant Pot. Pour in the chicken broth and add garlic powder, salt, black pepper, dried thyme or parsley, and the dry fusilli pasta. Stir gently to combine, making sure most of the pasta is submerged in the broth.
  3. Pressure cook the soup: Secure the Instant Pot lid and set the valve to Sealing. Cook on High Pressure for 4 minutes to ensure the chicken cooks through and the pasta softens perfectly.
  4. Release the pressure: When cooking ends, carefully perform a quick pressure release by turning the valve to Venting. Wait until all pressure is released and the pin drops, then remove the lid.
  5. Finish and serve: Stir the soup and let it rest for 3 to 5 minutes to thicken slightly. Remove any chicken bones carefully, shredding any chicken that has detached back into the soup. Taste and adjust seasoning as needed, then serve the warming chicken noodle soup immediately.
