Ingredients
Chicken and Potatoes
- 4 medium chicken breasts, boneless, skinless
- 2 lbs Yukon gold potatoes, washed and cut into 1-inch pieces
Seasoning and Broth
- 4 tablespoons extra virgin olive oil
- 1 cup chicken broth, gluten free
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon black pepper
- 1 teaspoon salt
Instructions
- Prepare the Potatoes: Wash the Yukon gold potatoes thoroughly and cut them into 1-inch pieces to ensure even cooking and tenderness.
- Layer in Instant Pot: Place the trivet inside the Instant Pot. Add the cut potatoes on top of the trivet, then carefully place the chicken breasts on top of the potatoes to allow even steam circulation and cooking.
- Add Broth: Pour 1 cup of gluten-free chicken broth over the chicken and potatoes; this liquid is essential for pressure cooking and infusing flavor.
- Season the Chicken: In a small bowl, combine the olive oil with garlic powder, onion powder, paprika, black pepper, and salt. Drizzle and evenly coat the chicken breasts with this spice and oil mixture to enhance flavor and moisture.
- Seal the Instant Pot: Close and lock the Instant Pot lid securely and ensure the steam valve is set to the ‘Sealing’ position to prepare for pressure cooking.
- Pressure Cook: Set the Instant Pot to manual high pressure for 15 minutes. It will take roughly 10 minutes to reach full pressure, after which the cooking timer will begin.
- Release Pressure: When cooking is complete, carefully flip the steam valve to ‘Venting’ to perform a quick release of pressure. Once the pressure indicator drops, open the lid safely.
- Serve: Remove the chicken and potatoes from the Instant Pot and serve hot as a satisfying main dish perfect for family meals.
Notes
- Using Yukon gold potatoes maintains texture after pressure cooking; russet potatoes may become too mushy.
- Ensure chicken breasts are similar in size for even cooking.
- Adjust seasoning as per preference; adding fresh herbs like thyme or rosemary can elevate flavor.
- You can brown the chicken briefly in the Instant Pot using the sauté function for added flavor before pressure cooking.
- Leftovers can be refrigerated for up to 3 days and reheated gently.
