Ingredients
Cashews
- 4 cups Raw Whole Cashew Nuts
Honey Butter Mixture
- ½ cup Honey
- 3 Tablespoons Butter
Cinnamon Sugar Topping
- ¼ cup Granulated Sugar
- 2 Tablespoons Brown Sugar
- 1 teaspoon Kosher Salt
- ½ teaspoon Cinnamon Sugar
Instructions
- Preheat Oven: Preheat the oven to 300°F (150°C) and line a large baking sheet with parchment paper to prevent sticking.
- Prepare Honey Butter Mixture: In a small saucepan over medium-low heat, combine the honey and butter. Stir regularly until the butter has fully melted and the mixture begins to bubble. Once bubbling, cook for 1 additional minute to thicken, then promptly remove from heat to avoid burning.
- Coat Cashews: Place the raw cashew nuts in a large mixing bowl. Pour the warm honey butter mixture over the nuts and stir thoroughly to ensure even coating. Spread the coated cashews in a single layer on the prepared baking sheet.
- Bake Cashews: Bake the cashews at 300°F for 25 minutes, stirring every 10 minutes to promote even roasting and prevent burning. This will give them a golden color and enhance flavor.
- Cool Cashews: Remove the baking sheet from the oven and let the cashews cool for 10 minutes on the sheet to slightly firm and set the honey butter glaze.
- Make Cinnamon Sugar: While the cashews cool, combine granulated sugar, brown sugar, kosher salt, and cinnamon in a small bowl. Stir until thoroughly mixed.
- Apply Cinnamon Sugar Coating: Transfer the slightly cooled cashews back to a large bowl. Sprinkle the prepared cinnamon sugar mixture over them. Toss vigorously with a wooden spoon for several minutes to coat the nuts thoroughly with the cinnamon sugar mixture.
- Final Cooling: Allow the cashews to cool completely to let the sugar coating harden slightly before serving or storing in an airtight container.
Notes
- Use parchment paper or a silicone baking mat to prevent sticking on the baking sheet.
- Stirring every 10 minutes prevents clumping and uneven roasting.
- Allowing the nuts to fully cool before storing ensures the coating hardens properly for better texture.
- Store in an airtight container at room temperature for up to 2 weeks.
- For a spicier twist, add a pinch of cayenne pepper to the cinnamon sugar mixture.
