Ingredients
Chicken and Sauce
- 2 pounds chicken breast
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1 cup BBQ sauce
- 1/4 cup honey
Base and Veggies
- 1 cup long grain rice
- 1 cup black beans (drained and rinsed)
- 1 cup corn (canned or frozen)
- 1 head romaine lettuce (chopped)
Toppings
- ½ cup shredded cheddar cheese
- ¼ cup pickled onions
- ¼ cup chopped cilantro
- ¼ cup ranch dressing
Instructions
- Prepare the Rice: Cook the long grain rice according to the package instructions until fluffy and tender. This will serve as the base for the bowls.
- Season the Chicken: Cut the chicken breasts into bite-sized, roughly 1-inch pieces. Season them evenly with salt, pepper, paprika, and garlic powder to infuse flavor before cooking.
- Cook the Chicken: Heat a large skillet over medium-high heat and add the olive oil. Once the oil is hot, add the seasoned chicken pieces in a single layer. Let them cook without stirring for 3-4 minutes to develop a good sear. Then stir occasionally, cooking for another 3-5 minutes until the chicken is cooked through and reaches an internal temperature of 165°F.
- Make the Honey BBQ Sauce: In a small bowl, whisk together the BBQ sauce and honey until smooth, creating a balanced sweet and tangy glaze for the chicken.
- Coat the Chicken: Pour the honey BBQ sauce over the cooked chicken in the skillet. Stir well to ensure every bite is coated evenly with the luscious sauce. Remove from heat once combined.
- Heat the Beans and Corn: Warm up the black beans and corn either in a microwave or on the stovetop until heated through, preparing them as additional bowl components.
- Assemble the Bowls: Begin by placing a scoop of cooked rice on one side of the bowl and a portion of chopped romaine lettuce on the other side.
- Add Beans and Corn: Add a scoop of the warmed black beans and corn into the bowl alongside the rice and lettuce.
- Top with Pickled Onions and Cheese: Sprinkle the bowls with pickled onions and shredded cheddar cheese to add tanginess and rich flavor.
- Finish with Ranch and Cilantro: Drizzle ranch dressing over the assembled ingredients and garnish with chopped cilantro for a fresh finish. Serve immediately and enjoy!
Notes
- To make pickled onions, thinly slice red onions and soak them in a mixture of vinegar, sugar, and salt for at least 30 minutes.
- You can use canned or frozen corn; just ensure it is heated before adding.
- Make sure chicken reaches an internal temperature of 165°F for safe consumption.
- This recipe can be customized with different beans or salad greens as preferred.
