Ingredients
Beef Mixture
- 1 pound ground beef
- Salt and pepper, to taste
- 1 teaspoon Italian seasoning (or Herbs de Provence)
Vegetables and Flavorings
- 2 tablespoons butter
- 8 ounces sliced mushrooms
- ½ white or yellow onion, diced
- 3 teaspoons minced garlic
Sauce
- ¼ cup flour
- 2 ½ cups beef broth
- 3 tablespoons soy sauce
- 1 teaspoon salt
- ¼ teaspoon pepper
- ⅔ to 1 cup sour cream
Pasta
- 8 ounces egg noodles (uncooked) or short pasta noodles like elbows or shells (cooked)
Instructions
- Brown the Ground Beef: Divide the ground beef into large chunks and place into a large skillet over medium heat. If your pan is not nonstick, drizzle a little oil first. Season generously with salt, pepper, and Italian seasoning. Brown for 2-3 minutes, then break up with a spoon or spatula and cook until no pink remains. Transfer the cooked beef to a bowl and cover to keep warm.
- Sauté Vegetables: Add butter to the same pan and melt. Stir in diced onions, sliced mushrooms, and minced garlic. Cook for about 2 minutes until the garlic is fragrant and onions are translucent.
- Make the Sauce: Sprinkle the flour into the pan and stir constantly for about 1 minute until it becomes foamy. Gradually whisk in the beef broth, continuing to stir to avoid lumps. Add the soy sauce, salt, and pepper, stirring to combine.
- Simmer and Finish the Sauce: Reduce the heat to a low simmer. Once the mixture stops bubbling, gently stir in the sour cream to make a creamy sauce.
- Combine and Serve: Return the browned ground beef to the skillet and add the egg noodles. Cover and simmer for 3-5 minutes if using uncooked egg noodles, until softened. Taste and adjust salt and pepper as needed. Garnish with chopped parsley if desired and serve warm.
Notes
- You can substitute the egg noodles with cooked elbow or shell pasta if preferred.
- To keep the sauce from curdling, add the sour cream off the heat and stir gently.
- For a richer flavor, use homemade beef broth.
- Leftovers store well in the refrigerator for up to 3 days and reheat gently on the stovetop or microwave.
