Ground Beef Cobbler is a hearty and comforting one-dish meal featuring a savory ground beef and vegetable mixture topped with a cheesy, biscuit crust. Perfect for family dinners, this recipe combines creamy soups, flavorful seasonings, and a cheesy biscuit topping baked to golden perfection.

  • Total Time: 1 hour
  • Yield: 6 servings

Ingredients

Beef Mixture

  • 1 pound ground beef
  • ½ cup diced yellow onion
  • 2 (10.4 ounce) cans cream of chicken soup (or cream of mushroom)
  • 12 ounce bag frozen vegetables
  • 1 cup chicken broth (or beef broth)
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon dried parsley
  • ¼ teaspoon salt
  • 1 cup shredded Colby Jack cheese (divided use)

Biscuit Topping

  • 11.36 ounce box Red Lobster Cheddar Bay Biscuit Mix (with seasoning packet)
  • 1 ¾ cup milk
  • ½ cup shredded Colby Jack cheese (remaining from 1 ½ cups total)

Finishing

  • ¼ cup (½ stick) melted unsalted butter
  • Seasoning packet from biscuit mix
  • 1 Tablespoon fresh chopped parsley (optional; can use dried parsley)

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 400˚F. Lightly spray a 9×13-inch baking dish with nonstick cooking spray to prevent sticking and allow for easy serving.
  2. Cook Ground Beef and Onion: In a large skillet over medium heat, add 1 pound of ground beef and ½ cup diced yellow onion. Cook and crumble the meat until it is fully browned and cooked through, about 7 minutes. Drain off any excess grease from the skillet and return the beef mixture back to the pan.
  3. Add Soup, Vegetables, and Seasonings: To the cooked beef in the skillet, add both cans (21 ounces total) of cream of chicken soup, 12 ounces of frozen vegetables, 1 cup of chicken broth, ½ teaspoon black pepper, ½ teaspoon garlic powder, ½ teaspoon dried parsley, and ¼ teaspoon salt. Stir everything together until evenly combined and heated through.
  4. Transfer Beef Mixture to Baking Dish: Pour the beef and vegetable mixture into the prepared baking dish, spreading it out evenly. Then sprinkle 1 cup of shredded Colby Jack cheese over the top to add a rich cheesy layer.
  5. Prepare Biscuit Topping: In a medium bowl, combine the Red Lobster Cheddar Bay Biscuit Mix with 1 ¾ cups milk, the remaining ½ cup shredded Colby Jack cheese, and mix until fully combined to form a thick batter. Spread this biscuit mixture evenly on top of the beef and cheese layer in the baking dish.
  6. Bake the Cobbler: Place the baking dish in the preheated oven and bake for 40 to 45 minutes, or until the biscuit topping is golden brown and fully cooked through.
  7. Prepare Butter and Seasoning Topping: While the cobbler bakes, mix together ¼ cup (½ stick) of melted unsalted butter with the seasoning packet from the biscuit mix in a small bowl. Once the cobbler is baked, remove it from the oven and use a pastry brush to coat the biscuit crust generously with this buttery seasoning mixture.
  8. Garnish and Serve: Optionally, sprinkle 1 tablespoon of fresh chopped parsley or a pinch of dried parsley over the top for a fresh herbal flavor and attractive presentation. Serve warm and enjoy your comforting Ground Beef Cobbler!

Notes

  • You can substitute the cream of chicken soup with cream of mushroom soup for a different flavor.
  • Be sure to drain the cooked ground beef to avoid a greasy filling.
  • Frozen mixed vegetables like peas, carrots, and corn work well in this recipe.
  • The biscuit topping can be spread with a spatula or gently poured and then spread evenly.
  • Using the seasoning packet brushed on top after baking enhances the cheddar bay biscuit flavors.
  • For a richer flavor, use beef broth instead of chicken broth if desired.
  • This recipe can be made ahead and refrigerated before baking—add a few extra minutes to baking if chilled.
