This Grilled Mango Chicken recipe combines juicy boneless, skinless chicken thighs with a sweet and savory mango-soy marinade. The chicken is marinated for at least two hours to soak in the vibrant flavors of mango, garlic, and ginger, then grilled to perfection for a tender, flavorful main dish that’s perfect for a summer barbecue or an easy weeknight dinner.

  • Total Time: 3 hours 15 minutes
  • Yield: 4 servings

Ingredients

Chicken

  • 2 lb. boneless, skinless chicken thighs

Marinade

  • 1/2 cup soy sauce
  • 2 ripe mangos
  • 3 garlic cloves
  • 1/2 tsp fresh ginger, grated
  • 2 tbsp water (or more as needed)

Garnish

  • Cilantro, chopped (optional)

Instructions

  1. Prepare the chicken: Place the boneless, skinless chicken thighs in a large plastic bag or baking dish and set aside to prepare the marinade.
  2. Make the marinade: In a small blender or food processor, combine the soy sauce, peeled and chopped mangos, garlic cloves, grated fresh ginger, and water. Pulse until the mixture is smooth, creating a flavorful mango-soy marinade.
  3. Marinate the chicken: Reserve 1/4 cup of the prepared sauce for later. Pour the remaining marinade over the chicken in the bag or dish, seal it tightly, and refrigerate for at least 2 hours or up to 8 hours to allow the chicken to absorb the flavors.
  4. Preheat the grill: Heat your grill to medium-high, about 400°F (204°C), ensuring it’s ready for grilling the chicken.
  5. Grill the chicken: Remove the chicken from the marinade using tongs, allowing any excess marinade to drip off. Grill the chicken thighs for 6 to 7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (74°C).
  6. Serve: Transfer the grilled chicken to a serving platter and brush it with the reserved 1/4 cup of mango sauce. Garnish with freshly chopped cilantro if desired and serve immediately.

Notes

  • For best flavor, marinate the chicken for a minimum of 2 hours; overnight marinating is optional but will deepen the taste.
  • If you don’t have a grill, the chicken can be cooked on a grill pan or under a broiler.
  • Make sure mangos are ripe for sweetness and better flavor in the marinade.
  • Adjust water quantity based on blender performance to ensure smooth sauce consistency.
  • Use tongs to handle the chicken to keep hands clean and prevent contamination.
