Ingredients
Chicken
- 2 pounds boneless, skinless chicken thighs
- 4 tablespoons olive oil
- 2 – 4 teaspoons chipotle powder (adjust based on spice preference)
- 2 teaspoons garlic powder
- 1 teaspoon salt
Salsa
- 2 peaches, halved and pitted
- ⅓ cup fresh cilantro, coarsely chopped
- ½ heaping cup red onion, chopped
- 1-2 jalapeño peppers, seeded and finely chopped (optional)
- ¼ teaspoon salt
- 1 tablespoon freshly squeezed lime juice
Garnish
- 4 lime wedges
- 1 avocado, sliced (optional)
Instructions
- Preheat the Grill: Preheat your grill to medium-high or high heat depending on your grill type to ensure a good sear and even cooking of the chicken and peaches.
- Prepare and Grill Peaches: Cut peaches in half and remove pits. Brush the cut sides lightly with olive oil, then place them cut side down on the grill. Grill for 4-5 minutes until softened and starting to char, rotating a quarter turn halfway through. Remove and set aside to cool.
- Make the Peach Salsa: While peaches cool, combine chopped cilantro, red onion, diced jalapeño (if using), lime juice, and salt in a bowl. Chop the cooled peaches and gently fold them into the salsa mixture. Refrigerate until ready to serve to let flavors meld.
- Season the Chicken: Mix chipotle powder, garlic powder, and salt in a small bowl. Brush both sides of the chicken thighs with olive oil, then sprinkle generously with the chipotle mixture, ensuring even coverage.
- Grill the Chicken: Place chicken on the preheated grill. Cook for 4 to 5 minutes on one side, then flip and grill another 4 to 5 minutes. The chicken is done when the internal temperature reaches 165°F (74°C). Remove from heat and let rest for 5 to 10 minutes to retain juices.
- Serve: Plate the grilled chipotle chicken and top with a generous scoop of peach salsa. Garnish with lime wedges and sliced avocado if desired, adding a fresh, creamy contrast to the spicy chicken and fruity salsa.
Notes
- Adjust chipotle powder quantity to control spice level according to personal preference.
- Seeding jalapeños reduces heat; include seeds for more spiciness.
- Letting the chicken rest after grilling helps keep it juicy and tender.
- Use firm peaches that are ripe but not overly soft for best grilling results.
- This recipe works well with chicken breasts if preferred, though thighs remain juicier.
- If a grill is unavailable, grilling the chicken and peaches on a grill pan or broiler works as alternatives.
