Ingredients
Marinade Ingredients
- 1/2 cup olive oil
- 4 tablespoons lemon juice
- 5 cloves garlic (chopped)
- 1/3 cup honey
- 1 teaspoon sweet paprika
- 1 tablespoon fresh rosemary (chopped)
- 1 tablespoon fresh thyme (chopped)
- 2 teaspoons fresh oregano (chopped)
Main Ingredients
- 1 whole chicken (about 4 pounds, cut into pieces)
- Fresh chopped parsley (for garnish)
- Lemon wedges (for serving)
- Grape tomatoes (halved, optional)
Instructions
- Mix marinade: In a glass dish, combine olive oil, lemon juice, chopped garlic, honey, paprika, rosemary, thyme, and oregano thoroughly to create a flavorful marinade.
- Marinate chicken: Add the chicken pieces to the marinade mixture, ensuring each piece is well-coated. Cover the dish and refrigerate for 2 hours to allow the flavors to deeply infuse the chicken.
- Preheat grill: Preheat an outdoor grill to high heat. Lightly oil the grill grate to prevent sticking.
- Grill chicken: Place the marinated chicken pieces on the hot grill, discarding any leftover marinade. Grill each side until the chicken is cooked through and the juices run clear, about 20 minutes in total depending on piece size. Ensure the internal temperature reaches 165°F (74°C) for safe consumption.
- Garnish and serve: Remove the chicken from the grill and sprinkle with fresh chopped parsley. Serve immediately with lemon wedges and optional halved grape tomatoes for added freshness and color.
Notes
- For juicier chicken, consider marinating overnight instead of 2 hours.
- Use a meat thermometer to ensure the chicken has reached the safe internal temperature.
- Adding grape tomatoes is optional but adds a nice fresh contrast.
- If you don’t have fresh herbs, dried can be substituted, but use about one-third the quantity.
- Make sure to discard any leftover marinade to avoid contamination from raw chicken juices.
