A flavorful and healthy twist on a classic Chinese takeout favorite, these General Tso’s Ground Chicken Bowls feature tender ground chicken and crisp broccoli coated in a tangy, slightly sweet sauce made with coconut aminos and blackstrap molasses. Served over cauliflower rice or steamed rice, this recipe is perfect for a quick, balanced meal that’s gluten-free and grain-free friendly.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

General Tso’s Sauce

  • 1/3 cup coconut aminos
  • 2 tbsp rice vinegar (sub apple cider vinegar for grain-free)
  • 2 tbsp chicken broth
  • 1 tbsp blackstrap molasses
  • 1 tsp coconut sugar
  • 1 tsp garlic powder
  • 1/2 tsp ginger powder
  • 2 tsp arrowroot starch
  • Salt and pepper (omit pepper for AIP)

Main Ingredients

  • 1 tbsp avocado oil
  • 1 1/2 cup broccoli florets
  • Salt and pepper to taste
  • 1 lb ground chicken
  • 2 tbsp green onion, sliced
  • 3 cups cauliflower rice (or cooked steamed rice)

Instructions

  1. Prepare the Sauce: In a bowl, combine the coconut aminos, rice vinegar, chicken broth, blackstrap molasses, coconut sugar, garlic powder, ginger powder, arrowroot starch, salt, and pepper. Whisk thoroughly until well blended and set aside to use later.
  2. Sauté Broccoli: Heat the avocado oil in a large pan over medium heat. Add the broccoli florets and sauté for 4-5 minutes until they are lightly crisp but tender. Season with salt and pepper to taste, then remove from the pan and set aside.
  3. Cook Ground Chicken: In the same pan, add the ground chicken, breaking it apart with a spatula. Cook over medium heat until the chicken is fully cooked through and no longer pink, seasoning lightly with salt and pepper.
  4. Combine and Thicken Sauce: Return the sautéed broccoli to the pan with the cooked ground chicken. Pour the prepared General Tso’s sauce over the mixture, reduce the heat to low, and stir continuously until the sauce thickens and evenly coats the chicken and broccoli.
  5. Serve: Serve the saucy chicken and broccoli mixture over cooked cauliflower rice or steamed rice. Garnish with sliced green onions for added freshness and crunch.

Notes

  • Use arrowroot starch as a thickener for a gluten-free and grain-free sauce.
  • You can substitute apple cider vinegar for rice vinegar to keep it grain-free.
  • For an AIP (Autoimmune Protocol) compliant version, omit pepper and coconut sugar.
  • This dish pairs wonderfully with cauliflower rice for a low-carb option or steamed jasmine rice for a more traditional experience.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
