Ingredients
Base Layer
- ¾ cup granola of choice, slightly crushed
Yogurt Mixture
- 1 ¼ cup plain or vanilla whole milk Greek yogurt
- ⅓ cup natural peanut butter
- ¾ cup Puori Vanilla Protein Powder (68-70 g)
Chocolate Topping
- ⅓ cup semi sweet chocolate chips
- 1 teaspoon coconut oil
Optional Toppings
- Flaky sea salt
- Additional granola for topping
Instructions
- Add Granola Base: In a silicone muffin pan, add a scant 1 tablespoon of granola to each well, just enough to cover the bottom evenly.
- Mix Yogurt Filling: In a bowl, thoroughly mix Greek yogurt, natural peanut butter, and vanilla protein powder until smooth and well combined.
- Fill Muffin Wells: Divide the yogurt mixture evenly among the muffin wells, roughly 3 tablespoons per well, placing it on top of the granola. Spread the mixture to cover the granola base, then gently tap the pan on the counter a few times to help the mixture settle.
- Freeze to Harden: Place the muffin pan in the freezer for about 30 minutes to allow the yogurt layer to harden slightly.
- Prepare Chocolate Topping: Combine chocolate chips and coconut oil in a microwave-safe bowl. Heat in 30-second increments, stirring well after each, then switch to 10-second increments once close to melted. Continue until the chocolate is fully melted and smooth.
- Top with Chocolate: Remove the pan from the freezer and spoon or drizzle the melted chocolate over each yogurt cup. If desired, sprinkle flaky sea salt or additional granola while the chocolate is still wet so it adheres well.
- Freeze Until Firm: Return the pan to the freezer and freeze for at least 45 minutes or overnight until the cups are fully firm and ready to serve.
- Serve: To serve, remove the cups from the freezer and let them sit at room temperature for 20-30 minutes to soften slightly for easier eating.
- Storage: Store any leftover peanut butter cups in the freezer to maintain firmness and freshness.
Notes
- You can substitute the granola with your favorite mix-ins like crushed nuts or seeds for different textures.
- Use plain or flavored Greek yogurt depending on your taste preference; vanilla adds natural sweetness.
- The protein powder adds a nutritional boost but can be omitted if desired, adjusting peanut butter quantity for texture.
- Allowing the cups to soften slightly before serving improves texture and flavor release.
- Store in an airtight container or covered muffin pan in the freezer to prevent freezer burn.
- For a vegan version, use plant-based yogurt, vegan protein powder, and dairy-free chocolate chips.
