Ingredients

For the Toasted Shallot Panko Topping

For the Dip

  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • ¼ cup ranch dressing
  • kosher salt, to taste
  • black pepper, to taste
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 tablespoon pickle juice
  • 1 ¼ cups dill pickles, finely chopped and blotted dry (plus additional for topping)
  • 1 tablespoon fresh dill, chopped (plus additional for garnish)
  • 1 tablespoon fresh chives, chopped (plus additional for garnish)
  • For Serving

    • Potato chips or another preferred dipper

Instructions

  1. Toast Shallot and Panko: Melt butter in a medium skillet over medium heat. Add the finely diced shallot and sauté for 4-5 minutes until translucent and softened. Stir in the panko breadcrumbs and continue cooking until the crumbs turn golden brown. Season with kosher salt to taste, then remove from heat and set aside to cool.
  2. Prepare the Dip Base: In a large bowl, use an electric hand mixer or whisk to combine the softened cream cheese, sour cream, ranch dressing, kosher salt, black pepper, garlic powder, onion powder, and pickle juice. Mix thoroughly until the texture is very smooth and creamy.
  3. Fold in Fresh Ingredients: Gently fold the finely chopped dill pickles, fresh dill, and chives into the creamy mixture using a spatula until evenly incorporated throughout the dip.
  4. Assemble and Garnish: Spread the prepared dip evenly into a shallow serving bowl or dish. Top with the toasted shallot and panko crumb mixture, then sprinkle additional chopped pickles, dill, and chives on top for garnish. Serve immediately with potato chips or your choice of dippers.
