Ingredients

Wet Ingredients

  • 3 eggs
  • ¼ cup milk (unsweetened almond milk recommended)
  • ¼ cup honey or maple syrup
  • 2 Tablespoons avocado oil or melted butter (plus extra for cooking)
  • ½ Tablespoon vanilla extract
  • 1 cup grated carrot (about 1 large carrot)
  • 1 cup grated apple (about 1 large apple)

Dry Ingredients

  • 2 cups rolled oats (use gluten free oats if needed)
  • 2 teaspoons baking powder
  • ½ Tablespoon ground cinnamon
  • ¼ teaspoon salt

Instructions

  1. Blend wet ingredients: Combine eggs, milk, honey or maple syrup, oil, vanilla extract, grated carrots, and grated apple into a high-speed blender. Blend until completely smooth and the apple and carrots are fully pureed.
  2. Add dry ingredients & blend batter: Add oats, baking powder, cinnamon, and salt to the blender with the pureed wet ingredients. Blend again until the batter is smooth and oats are fully broken down into a flour-like texture. If your blender is not high-speed, blend oats separately, then combine with wet ingredients as described in the note.
  3. Heat skillet: Preheat a skillet over medium heat and add a little extra oil or butter to prevent sticking and ensure even cooking.
  4. Cook pancakes: Use a ¼ cup measuring cup to portion batter onto the skillet. Cook each pancake for about 3 minutes per side or until bubbles appear on the surface and edges are set. Add more oil as necessary between batches.
  5. Serve warm: Enjoy the pancakes while warm with your favorite toppings such as fresh fruit, yogurt, or maple syrup.
  6. Store leftovers: Allow any leftovers to cool completely. Store in an airtight container in the refrigerator for up to 5 days.
