Ingredients

Eggs

  • 6 large eggs

Vegetables & Aromatics

  • 2 tomatoes
  • 1/2 onion (divided)
  • 2 garlic cloves
  • 1 red bell pepper
  • 1 habanero pepper

  • 1 tsp curry powder
  • 1/2 tsp thyme
  • 1 tbsp bouillon powder
  • Salt, to taste

Instructions

  1. Blend the base mixture: Coarsely blend the tomatoes, red bell pepper, habanero pepper, and half of the onion until you get a chunky sauce base.
  2. Prepare remaining aromatics: Chop the other half of the onion finely and mince the garlic cloves for sautéing.
  3. Whisk the eggs: Crack the eggs into a bowl and whisk them lightly to combine the yolks and whites evenly.
  4. Sauté onions and garlic: Heat the olive oil in a pan over medium heat. Add the chopped onions and minced garlic and sauté until fragrant and translucent, about 2-3 minutes.
  5. Add blended mixture: Pour the blended tomato and pepper mixture into the pan with sautéed onions and garlic. Stir well to combine.
  6. Simmer the sauce: Let the tomato mixture simmer on medium-high heat for about 5 minutes or until most of the liquid has evaporated, thickening the sauce.
  7. Season the stew: Add the curry powder, thyme, and bouillon powder to the simmering sauce. Stir and cook for an additional 2 minutes to infuse the flavors.
  8. Add the eggs: Pour the whisked eggs into the pot without stirring immediately. Let them sit for 2 minutes to begin setting.
  9. Mix the eggs in: After the eggs start setting, gently stir to scramble and evenly mix them throughout the stew.
