Blondie Batter

Instructions

- Make the Batter: In a large mixing bowl, beat together the granulated sugar, softened butter, and brown sugar until creamy using a hand or stand mixer. Add the eggs and vanilla bean paste, then beat again just until combined, ensuring not to overwork the mixture.
- Mix Dry Ingredients: In a separate medium bowl, whisk together the all-purpose flour, cinnamon, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing just until incorporated to avoid overmixing and maintain tenderness.
- Assemble the Blondies: Pour the batter evenly into the prepared baking pan. In a small bowl, combine the sugar and cinnamon for the topping, then sprinkle this mixture evenly over the batter’s surface for that classic snickerdoodle flavor.
- Bake: Bake in the preheated oven for 25 to 30 minutes, or until the edges are golden brown and the center is still slightly soft to the touch. Avoid overbaking to keep the blondies moist and chewy.
