Cook, stirring frequently, until fragrant, about 3 minutes. Add half of the chopped dill and stir for an additional 30 seconds to release its flavor.
- Add Broth and Vegetables: Pour in the 5 cups of low-sodium chicken broth, then add the thinly sliced potatoes and carrots. Sprinkle in the dry oregano, ground coriander, ground cumin, and season with kosher salt and black pepper to taste. Bring the mixture to a rolling boil.
- Simmer Vegetables: Reduce the heat to medium and let the soup cook for 5 to 6 minutes, or until the potatoes and carrots become tender but not mushy.
- Cook Salmon: Season the salmon chunks with kosher salt. Gently add them to the pot, lowering the heat to a gentle simmer. Cook for 3 to 5 minutes, until the salmon is cooked through and flakes easily with a fork.
