Ingredients
Rice and Spices
- 2 cups uncooked long grain rice
- ½ tablespoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- ¼ teaspoon cayenne pepper
Liquids and Sauce
- 3 cups vegetable stock
- 3 tablespoons soy sauce
Finishing Ingredients
- 5 tablespoons peanut butter
- Salt to taste (approximately ¼ teaspoon)
Instructions
- Rinse the rice: Rinse the rice thoroughly under cold water until the water runs clear to remove excess starch and prevent mushy rice.
- Combine rice and spices: In a medium-sized saucepan, add the rinsed rice along with onion powder, garlic powder, smoked paprika, and cayenne pepper. Stir to combine evenly.
- Add liquids: Pour in the vegetable stock and soy sauce, mixing well to distribute flavors. Cover the saucepan with a tight-fitting lid.
- Simmer the rice: Heat the pot on high until the stock reaches a lively simmer. Then reduce the heat to low and cook for 13 minutes without lifting the lid to ensure proper steaming.
- Steam off-heat: Remove the saucepan from the heat and let the rice steam, covered, for an additional 10 minutes to complete cooking and absorb moisture.
- Fluff and mix peanut butter: Remove the lid, fluff the rice gently with a fork. Add the peanut butter and stir thoroughly so every rice grain is coated evenly. Season with salt to taste depending on the saltiness of your stock and soy sauce.
- Serve or store: Serve immediately while warm or let it cool to room temperature. If saving for later, cool completely and refrigerate in a covered container for up to five days.
