Ingredients
Zucchini
- 5 medium zucchinis
- Salt, to liberally season and taste
- 1 Tbsp olive oil or avocado oil
Topping
- 1/3 cup goat cheese, crumbled
- 2 Tbsp fresh basil, chopped
- 1.5 Tbsp honey
- Salt and pepper, to taste
Instructions
- Prepare Zucchini: Remove the ends from the zucchinis and slice each one lengthwise into 1/2-inch thick pieces. Spread the slices out on a plate or cutting board and generously sprinkle with salt. Let them sit for 20 minutes to draw out excess moisture. After 20 minutes, pat the slices dry thoroughly with a clean cloth or paper towel.
- Preheat the Grill: Heat your grill or grill pan to medium-high heat. Prepare the zucchini slices by brushing both sides with olive oil or avocado oil to prevent sticking and promote caramelization.
- Grill the Zucchini: Place the zucchini slices on the hot grill. Cook for 10 to 15 minutes, turning halfway through to ensure even cooking and grill marks. The zucchini is ready when it becomes tender but not mushy, and grill marks are visible. Avoid overcooking to keep the texture firm.
- Assemble and Serve: Remove the zucchini from the grill and arrange on a serving plate. Sprinkle crumbled goat cheese and freshly chopped basil over the top. Drizzle with honey, then season with additional salt and pepper to taste. Serve immediately to enjoy the contrast of smoky zucchini, creamy cheese, and sweet honey.
Notes
- Salting the zucchini helps to remove excess moisture, which prevents sogginess when grilling.
- You can substitute goat cheese with feta or ricotta for a different flavor profile.
- For a vegan version, replace goat cheese with a plant-based cheese and use maple syrup instead of honey.
- Grill time may vary depending on the thickness of the zucchini slices; adjust accordingly.
- This dish pairs well with grilled meats, seafood, or as a light standalone salad.
