Delicious and spicy Drunken Noodles (Pad Kee Mao) featuring wide rice noodles stir-fried with garlic, ginger, Thai chili, vegetables, and fragrant Thai basil leaves, tossed in a flavorful dark soy and vegetarian oyster sauce mixture. This quick 30-minute recipe delivers a perfect balance of heat, savory, and sweetness for an authentic Thai street food experience.

  • Total Time: 30 minutes
  • Yield: 2 servings

Ingredients

Noodles and Sauce

  • 8 oz wide rice noodles (about 1/2 a standard package)
  • 1 tbsp dark soy sauce
  • 1 tbsp soy sauce (use gluten-free soy sauce if needed)
  • 2 tbsp vegetarian oyster sauce
  • 1 tbsp coconut sugar (can substitute agave or maple syrup)
  • 1 tbsp water

Stir-Fry Ingredients

  • 2 tbsp vegetable oil
  • 3 garlic cloves, minced
  • 1-inch cube of ginger, minced
  • 1 Thai chili, finely chopped (or more if you like it really spicy)
  • 3 green onions, chopped (can substitute 1/2 regular onion)
  • 1/2 red pepper, chopped
  • 2 large handfuls of Thai basil leaves

Optional Toppings

  • Crushed peanuts
  • Lime wedge

Instructions

  1. Cook the Noodles: Bring a pot of water to a boil and cook the wide rice noodles for 2-3 minutes until al dente. They should still be slightly firm in the center, not fully cooked. Drain and set aside.
  2. Sauté Aromatics and Vegetables: Heat vegetable oil in a large pan over medium-high heat. Add minced garlic and chopped Thai chili and cook for about 1 minute until fragrant. Then add minced ginger, chopped green onions, and red pepper. Stir-fry for an additional 2-3 minutes until the vegetables soften slightly.
  3. Add Noodles to Pan: Add the cooked rice noodles to the pan and toss everything together. Allow the noodles to cook undisturbed for about 2 minutes so they start to brown slightly on the bottom.
  4. Add Sauce and Basil: Reduce the heat to medium, then pour in the dark soy sauce, soy sauce, vegetarian oyster sauce, coconut sugar, and water. Add the Thai basil leaves and gently toss everything together until the noodles are evenly coated and the basil is wilted.
  5. Serve: Remove from heat and serve immediately. Garnish with crushed peanuts and a lime wedge if desired for an extra layer of flavor and texture.

Notes

  • Cooking noodles al dente prevents them from getting mushy while stir-frying.
  • Adjust the amount of Thai chili to make the dish milder or spicier based on preference.
  • Use gluten-free soy sauce to make this recipe gluten-free.
  • Vegetarian oyster sauce used here is a plant-based alternative suitable for vegetarians.
  • Serve immediately after cooking for best taste and texture.
  • Add crushed peanuts and a squeeze of lime for authentic garnishes.
