  • 1 scant cup almond flour (102g)
  • 1.5 tbsp potato starch (18g)
  • 1 ½ tsp baking powder (7g)
  • ¾ tsp baking soda (3g)
  • 1 tbsp chai spice blend
  • ¼ tsp salt

Toppings

  • 1/2 cup vegan powdered sugar
  • 2 tsp espresso
  • Handful of crushed walnuts for topping (optional)

Instructions

  1. Preheat Oven and Prepare Muffin Cups: Preheat your oven to 425°F (210°C). Line or grease 6 muffin cups to prevent sticking and ensure easy removal of the muffins after baking.
  2. Mix Wet Ingredients: In a mixing bowl, combine the vanilla coconut yogurt, strong coffee at room temperature, and maple syrup. Whisk thoroughly until the mixture is smooth and homogenous.
  3. Add Dry Ingredients: Gradually whisk in the oat flour, almond flour, potato starch, baking powder, baking soda, chai spice blend, and salt until just combined. Avoid overmixing for lighter muffins.
  4. Portion and Bake: Divide the batter evenly into the muffin cups, approximately 90g each. Bake at 425°F (210°C) for 5 minutes to give an initial rise.
  5. Lower Temperature and Continue Baking: Reduce the oven temperature to 350°F (175°C) and bake for an additional 18–20 minutes. The muffins are done when they are springy to the touch and a toothpick inserted in the center comes out clean.
