  • Total Time: 45 minutes
  • Yield: 24 servings

Ingredients

For the Crust and Topping

  • 1 cup butter, softened to room temperature
  • 2 cups brown sugar
  • 2 eggs
  • 2 tsp vanilla flavoring
  • 2 1/2 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 cups oats (old fashioned or quick)

For the Chocolate Fudge Filling

  • 2 cups semi sweet chocolate chips
  • 1 (14 oz) can sweetened condensed milk
  • 2 Tbsp butter
  • 2 tsp vanilla

Instructions

  1. Prepare the Crumb Mixture: Cream together the softened butter and brown sugar in a large mixing bowl until light and fluffy. Add in the eggs and 2 teaspoons vanilla flavoring, mixing until well combined. In a separate bowl, whisk together the flour, baking soda, salt, and oats, then gradually add this dry mixture to the wet ingredients. Mix until the dough is crumbly. Set this mixture aside.
  2. Make the Chocolate Fudge Filling: In a microwave-safe glass bowl, combine the chocolate chips, sweetened condensed milk, and 2 tablespoons butter. Heat in the microwave, stirring every 30 seconds until the mixture is smooth and fully melted. Remove from microwave and stir in 2 teaspoons vanilla.
  3. Assemble the Bars: Grease a 9×13 inch baking pan. Spread two-thirds of the crumb mixture evenly across the bottom to form the base crust. Pour the chocolate fudge filling over this crust, spreading it to cover evenly. Finally, drop spoonfuls of the remaining crumb mixture over the chocolate layer to create a scattered topping.
  4. Bake the Bars: Preheat your oven to 350°F (175°C). Bake the assembled bars for 25–30 minutes, or until the top crumbs turn golden brown and the fudge filling is set around the edges.

Notes

  • For a nuttier flavor, lightly toast the oats before mixing.
  • Use old fashioned oats for a chewier texture; quick oats will yield a softer crumb.
  • Allow bars to cool completely before slicing to ensure clean cuts.
  • Store bars in an airtight container at room temperature for up to 4 days or refrigerate for up to a week.
  • Optional: Add chopped nuts like walnuts or pecans to the crumb mixture for added crunch.
