Instructions
- Preheat the oven: Set your oven temperature to 350°F (180°C) and allow it to fully preheat for an even baking environment.
- Blend wet ingredients: In a food processor, combine the pitted dates, non-dairy milk, peanut butter, salt (if using), and vanilla bean paste (if using). Blend until the mixture is smooth with no large date pieces remaining.
- Add dry ingredients and form dough: Add the oat flour and baking powder to the food processor. Pulse the mixture until a uniform dough forms, scraping down the sides as necessary to ensure everything is well incorporated.
- Shape cookies: Scoop out heaping tablespoons (about 40g each) of dough and roll them into balls. Place them on a baking sheet lined with parchment paper, then flatten each ball gently using the back of a fork to create the classic cookie shape.
- Bake: Place the tray in the preheated oven and bake the cookies for 15 minutes, or until they are set and lightly golden on the edges.
- Garnish (optional): Once the cookies have cooled slightly, drizzle melted dark chocolate over them and sprinkle with flaky sea salt to enhance their flavor and presentation.
