  • Total Time: 25 minutes
  • Yield: 12 cookies

Ingredients

Cookies base

  • 1/2 cup butter
  • 1/2 cup granulated sugar
  • 2 tbsp brown sugar
  • 1 large egg
  • 1 tsp vanilla bean paste
  • 1 & 1/2 cup all purpose flour
  • 2 tbsp corn starch
  • 1/4 tsp cream of tartar
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Cinnamon sugar mixture

  • 3 tbsp granulated sugar
  • 1/2 tsp cinnamon

Cream cheese frosting

  • 5 oz cream cheese, softened
  • 4 tbsp butter, softened
  • 1/2 tsp vanilla bean paste
  • 1 to 1 & 1/2 cup powdered sugar (add additional 1/2 cup if frosting seems too thin)

Instructions

  1. Make the cookie dough: Preheat the oven to 350°F and line a baking sheet with parchment paper. Cream together the butter, granulated sugar, and brown sugar until light and creamy. Add the egg and vanilla bean paste and mix until smooth. Gradually incorporate the flour, corn starch, cream of tartar, baking powder, baking soda, cinnamon, and salt until no flour streaks remain.
  2. Shape and coat cookies: Scoop equally sized cookie dough balls, then roll them in the cinnamon sugar mixture. Place them on the prepared baking sheet and gently flatten to about 1 inch thickness.
  3. Bake the cookies: Bake in the preheated oven for 10 minutes until edges are set. Remove from oven and allow cookies to cool completely on the baking sheet.
  4. Make the cinnamon sugar mixture: Combine 3 tablespoons of granulated sugar with 1/2 teaspoon cinnamon in a shallow bowl for rolling the dough balls and sprinkling later.
  5. Prepare the cream cheese frosting: Beat together softened cream cheese, butter, powdered sugar, and vanilla bean paste until smooth and creamy. Add extra powdered sugar if the frosting is too thin for piping.
  6. Decorate the cookies: Fill a piping or ziplock bag with the cream cheese frosting. Pipe beautiful swirls over the cooled cookies, sprinkle remaining cinnamon sugar on top, and serve.

Notes

  • Ensure butter and cream cheese are softened to room temperature for smooth frosting.
  • Do not overbake the cookies to keep them soft and chewy.
  • Additional powdered sugar can be gradually added to the frosting to reach desired consistency for piping.
  • Store cookies in an airtight container in the refrigerator to keep the frosting fresh.
  • Bring cookies to room temperature before serving for the best texture and flavor.
