Instructions
- Prepare the Fish: Start with fully thawed cod fillets and pat them dry thoroughly using paper towels to remove any surface moisture, which helps the breading adhere better.
- Mix the Breading: In three separate shallow bowls, place the flour in the first, the beaten eggs in the second, and combine the Panko, Parmesan cheese, lemon zest, salt, onion powder, and garlic powder in the third. Stir the Panko mixture well until everything is evenly incorporated.
- Bread the Fish: Using tongs or your fingers, dredge each fillet first in the flour, shaking off any excess. Then dip the fillet into the beaten eggs, allowing excess egg to drip off. Finally, press the fillet gently into the Panko mixture to coat thoroughly on all sides. Place the breaded fillets on a clean plate or cutting board and repeat for remaining fillets.
- Preheat the Air Fryer: Set your air fryer to 400°F (204°C) and preheat for 5 minutes to ensure even cooking and crispiness.
- Cook the Fish: Place the coated fillets in the air fryer basket or tray, ensuring they do not overlap. Cook for 6-8 minutes, or until the internal temperature of the thickest part reaches 145°F (63°C) and the breading is golden and crispy.
- Serve and Enjoy: Serve your crispy air fryer cod with tartar sauce and lemon wedges. Optionally, sprinkle with fresh parsley for added color and flavor.
