This creamy cauliflower Alfredo sauce is a delicious and healthy vegan alternative to traditional Alfredo. Made with simple ingredients like cauliflower, garlic, and vegetable broth, it offers a rich, velvety texture that’s perfect for pasta, pizza, roasted vegetables, or baked potatoes. Dairy-free and easy to prepare, this sauce is a flavorful way to enjoy comfort food with a nutritious twist.

  • Total Time: 22 minutes
  • Yield: About 2 cups of sauce, serving 4

Ingredients

Base Ingredients

  • 1 tbsp extra virgin olive oil
  • 4 cloves garlic, peeled and minced
  • 3 cups cauliflower florets (about 1 medium head)
  • 1 cup vegetable broth (or your favorite broth)

Seasonings and Liquids

  • 1 tsp sea salt
  • 1/4 tsp onion powder
  • Black pepper, to taste
  • 1/4 cup unsweetened almond milk or coconut milk (if dairy-free isn’t needed, regular milk can be used)

Instructions

  1. Sauté the Garlic: In a large pot, heat the olive oil over low heat. Once the oil is hot, add the minced garlic and sauté for 1–2 minutes until fragrant but not browned.
  2. Cook the Cauliflower: Add the cauliflower florets and vegetable broth to the pot. Raise the heat to medium-high and cover the pot. Bring the contents to a boil, then reduce heat to a simmer. Cook for 7–9 minutes, or until the cauliflower is fork tender.
  3. Blend the Sauce: Carefully transfer the cooked cauliflower, garlic, and broth mixture into a blender or food processor. Add the sea salt, onion powder, milk, and black pepper. Puree until smooth and creamy.
  4. Adjust Seasoning and Consistency: Taste the sauce and adjust the seasoning as desired. If you prefer a thinner sauce, gradually add extra broth or milk until the desired consistency is reached.
  5. Serve and Store: Enjoy the creamy cauliflower Alfredo sauce warm over pasta, pizza, roasted vegetables, or a baked potato. Let any leftovers cool completely and store in an airtight container in the refrigerator for up to 5 days or freeze for longer storage.

Notes

  • This sauce is vegan and dairy-free but can be adapted with regular milk if dairy is preferred.
  • For a thicker sauce, use less broth or milk when blending.
  • Store leftovers in an airtight container for up to 5 days in the fridge or freeze for several months.
  • Feel free to add nutritional yeast for a cheesy flavor without dairy.
  • Use fresh garlic for best flavor and avoid browning it during sautéing to keep the sauce smooth.
