This Creamy Tuscan Salmon recipe features tender salmon fillets cooked to perfection with a flavorful sauce made from sun-dried tomatoes, fresh spinach, and a rich cream base. Enhanced with garlic, lemon juice, and finished with fresh basil and parmesan, it offers a delightful Italian-inspired dinner that can be prepared in just 20 minutes.

  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

Salmon and Seasoning

  • 1 pound fresh salmon (cut into 4 pieces)
  • Salt & pepper (to taste)
  • 1/4 teaspoon garlic powder
  • Flour (for dredging, about 2-3 tablespoons)

Cooking Fats

  • 1 tablespoon olive oil
  • 1 tablespoon butter

Sauce Ingredients

  • 1/2 cup chicken broth
  • 1 teaspoon lemon juice
  • 1/4 cup sun-dried tomatoes (chopped)
  • 1 cup heavy/whipping cream
  • 1-2 cups packed fresh baby spinach
  • 1 tablespoon fresh basil (sliced thin)
  • Freshly grated parmesan cheese (to taste)

Instructions

  1. Prepare the Salmon: Pat the salmon dry and season both sides with salt, pepper, and garlic powder. Dredge each piece lightly in flour, shaking off excess to ensure a thin coating.
  2. Cook the Salmon: Heat olive oil and butter in a skillet over medium-high heat until hot. Add the salmon pieces carefully and cook for 3-4 minutes on each side to develop a golden crust without fully cooking through. Remove from pan and set aside.
  3. Start the Sauce: In the same skillet, add chicken broth, lemon juice, and chopped sun-dried tomatoes. Allow the mixture to bubble and reduce slightly for a couple of minutes to concentrate flavors.
  4. Add Cream: Stir in the heavy cream and cook for an additional couple of minutes, letting the sauce simmer gently and thicken.
  5. Incorporate Spinach and Finish Cooking Salmon: Reduce heat to medium-low and add the fresh baby spinach to the skillet. Let it wilt for about 30 seconds, then nestle the partially cooked salmon back into the sauce. Continue cooking until the salmon is fully cooked through and the sauce has thickened to your liking, about 3-5 minutes.
  6. Serve: Garnish with sliced fresh basil and a generous sprinkle of freshly grated parmesan cheese. Serve immediately for a rich and comforting meal.

Notes

  • Sun-dried tomatoes can be oil-packed or dry; if dry, soak them in warm water for 10 minutes before chopping to soften.
  • Be careful not to overcook the salmon during the initial sear to avoid drying it out.
  • This dish pairs well with crusty bread, mashed potatoes, or cooked pasta to soak up the creamy sauce.
