Instructions
- Sauté vegetables: Heat the oil in a large stock pot over medium-high heat. Add the diced onion and sliced carrots, stirring frequently for 6-8 minutes until the carrots soften slightly.
- Add aromatics and spices: Stir in the minced garlic, finely chopped ginger, red pepper flakes, and paprika. Cook for 2-3 minutes until fragrant, ensuring the spices release their flavors.
- Cook sweet potatoes: Add the diced sweet potatoes and pour in the vegetable broth. Increase the heat to high and bring the mixture to a boil. Once boiling, reduce heat to low, cover with a lid, and simmer for 15-20 minutes until the sweet potatoes are fork-tender.
- Blend the soup: Carefully transfer the cooked soup ingredients to a high-powered blender. Blend on high for about one minute until smooth and creamy. Adjust consistency by adding more broth or water if desired.
- Serve and garnish: Pour the blended soup into bowls. Garnish each serving with a dollop of coconut cream or yogurt, chopped pistachios, a sprinkle of red pepper flakes, cracked black pepper, and fresh watercress. Serve warm.
