  • 14 oz canned coconut milk
  • 2-3 tbsp cilantro (coriander), chopped
  • 1 lemon, for squeezing
  • Salt and pepper, to taste

Instructions

  1. Preheat the Oven: Preheat your oven to 200°C (400°F) to prepare for roasting the mushrooms and onions.
  2. Roast Mushrooms and Onions: Place the quartered mushrooms and thinly sliced onions in a 9×13 baking tray. Drizzle with olive oil to lightly coat everything. Sprinkle curry powder, smoked paprika, and garlic powder over the vegetables. Toss well and season generously with salt and pepper. Roast in the oven for about 20 minutes until nicely browned.
  3. Prepare the Curry Sauce Base: While the vegetables roast, heat a small amount of olive oil in a wide-bottomed sauté pan over low heat. Add the crushed garlic and grated ginger, cooking gently until soft and aromatic.
