Ingredients
Noodles
- 2 7-ounce packets pre-cooked udon noodles (vacuum-packaged or frozen)
Sauce & Aromatics
- 1 tablespoon extra virgin olive oil (more as needed)
- 3 cups mushrooms of choice (baby bella, shimeji, oyster mushrooms, king oyster mushrooms)
- ½ tablespoon butter
- 2 garlic cloves (minced)
- ½ shallot (finely diced)
- ½ cup heavy cream (more as needed, optional lighter substitute)
- ½ cup pasta water (more as needed)
- 2 tablespoons miso paste (white or brown)
- ¼ cup grated parmesan cheese
- Salt and pepper (to taste)
Toppings
- Chopped roasted nori
- Red pepper flakes
Instructions
- Cook the udon: Bring a pot of water to a boil and cook the pre-cooked udon noodles according to package instructions until al dente. Reserve ½ cup of the pasta water before draining the noodles and set them aside.
- Sear the mushrooms: Heat olive oil in a large pan over medium-high heat. Add the mushrooms and let them sear without stirring frequently so they brown nicely, about 5-7 minutes.
- Sauté the aromatics: Reduce the heat to medium-low. Add butter, minced garlic, and finely diced shallot to the pan with the mushrooms. Sauté until fragrant and softened, about 2-3 minutes.
- Prepare the sauce: Stir in the heavy cream, reserved pasta water, miso paste, and grated parmesan cheese. Mix well to dissolve the miso and blend all ingredients. Season with salt and pepper to taste.
- Combine: Add the cooked udon noodles into the pan and toss everything together until the noodles are well coated with the creamy miso mushroom sauce.
- Garnish and serve: Sprinkle chopped roasted nori and red pepper flakes on top. Serve immediately and enjoy this warm, comforting dish.

- You can substitute heavy cream with a lighter cream or coconut milk for a different flavor and reduced calories.
- Using a mix of mushrooms adds depth to the dish’s umami flavor.
