- 28 ounces (2 cans) butter beans (drained and rinsed)

- 3 cups packed baby spinach
- 1/2 teaspoon sea salt
- 1/2 teaspoon ground black pepper
- 2 tablespoons lemon juice

Instructions
- Sauté Shallots: In a large skillet or pot, heat the olive oil over medium-high heat. Once hot, add the thinly sliced shallots and cook for 3 to 5 minutes until they become translucent, releasing their sweetness.
- Add Garlic: Add the minced garlic to the skillet and cook for 30 seconds to a minute, stirring constantly to prevent burning and to infuse the oil with garlic flavor.
- Add Beans and Miso Mixture: Pour in the drained and rinsed butter beans, vegetable stock, and white miso paste. Stir thoroughly until the miso paste has dissolved fully into the liquid. Bring the mixture to a simmer and cook for about 10 minutes to allow it to reduce and thicken slightly.
- Add Cream and Simmer: Stir in the whole cream (or coconut cream for a dairy-free option). Continue to simmer for an additional 5 minutes to meld the flavors and achieve a creamy consistency.
- Add Spinach and Seasonings: Stir in the packed baby spinach along with the sea salt and ground black pepper. Cook just until the spinach has wilted, then remove the skillet from heat.
- Finish with Lemon Juice and Serve: Stir in the fresh lemon juice for brightness. Optionally, top the dish with chopped fresh dill. Serve warm with slices of crusty bread for a complete meal.
Notes
- Substitute coconut cream for whole cream to make this recipe dairy-free and vegan.
- Butter beans can be replaced with cannellini or great northern beans if desired.
- Fresh dill adds a lovely herbaceous note, but it’s optional.
- Serve with crusty bread or over rice for a hearty meal.
- Store leftovers covered in the refrigerator for up to 3 days. Reheat gently on the stovetop.
