Ingredients
Chicken
- 4 chicken thighs (boneless & skinless)
- ½ tsp salt
- ¼ tsp freshly cracked black pepper
- 1 Tbsp cooking oil
Sauce
- 2 tsp garlic cloves (minced)
- 8 oz. mushrooms (sliced)
- ½ cup chicken broth
- 1 cup half and half (room temperature)
- ¼ cup Parmesan cheese (grated)
Garnish
- Fresh parsley (optional)
Instructions
- Gather and prep your ingredients: Assemble all necessary ingredients for the recipe and ensure the chicken thighs are trimmed if needed. Mince garlic and slice mushrooms so everything is ready for cooking.
- Season the chicken: Pat the chicken thighs dry and season both sides evenly with salt and freshly cracked black pepper to bring out flavor.
- Brown the chicken: Heat a large skillet over medium heat and add the cooking oil. Swirl to coat the skillet bottom. Add the chicken thighs and cook for about 5 minutes on each side until golden brown and cooked through. Remove chicken to a plate and cover with foil to keep warm.
- Sauté garlic and mushrooms: In the same skillet, add minced garlic and sauté for about one minute until fragrant and softened. Add the sliced mushrooms and continue sautéing for 5-7 minutes until the mushrooms have wilted and released their moisture.
- Deglaze with broth: Pour chicken broth into the skillet and stir, scraping the bottom of the pan to lift off any browned bits, incorporating extra flavor into the sauce.
- Add cream and simmer: Add the room temperature half and half to the skillet and bring the mixture up to a gentle simmer. Reduce heat to medium-low and let it simmer for about five minutes, stirring frequently to thicken the sauce. Stir in the grated Parmesan cheese until melted and smooth.
- Reheat chicken in sauce: Taste the sauce and adjust seasoning with salt and pepper if necessary. Return the chicken thighs to the skillet, coat them generously with the creamy sauce, and heat over low until warmed through. Ensure the internal temperature of chicken reaches 165°F before serving.
- Serve and garnish: Plate the chicken thighs and spoon additional creamy mushroom sauce over the top. Garnish with fresh parsley if desired and serve immediately. Enjoy your comforting creamy garlic mushroom chicken!
Notes
- Use boneless, skinless chicken thighs for a tender and juicy texture.
- Half and half can be substituted with heavy cream for a richer sauce or with milk for a lighter option, but the consistency will vary.
- Slicing mushrooms uniformly helps them cook evenly.
- Keep the chicken covered after browning to retain warmth while finishing the sauce.
- If the sauce becomes too thick, add a splash of chicken broth or water to loosen it.
- Ensure chicken is cooked to an internal temperature of 165°F for safety.
